We Are What We Eat -- Oh So True

Wanna cook up something a little different, like say a sample of Indian cuisine on your hubby's plate? Well, tried the "Curried Mashed Potatoes" on Page 354 of this delightful low fat cookbook. The peas mixed with the potatoes set off with a tangy curry powder makes for a tasty potato dish. There are a lot of other tasty, low fat recipes in this book that I come back to again and again. like the "Pasta e Fagioli Soup" on Page 141, a perfect beginning to a meal. After all, who says all meals must start with salad. However, if you believe that, try the "Summer Herb Tomato Salad on Page 70.
With this book you can eat well and eat healthy at the same time, something my husband didn't think possible till I started pruning recipes from this book and a few other. Ms. Golson really knows her stuff. She opens the book with the words "There is no longer any doubt that we are what we eat," and that is oh so true. If you want to slim down, but not feel like you're eating cardboard, give this book a look, you won't be sorry.

I don't even remember how my husband and I acquired this cookbook but we've had it for years. Everything we've made from this book has been absolutely wonderful! Everything has so much taste and even though I don't eat meat other than chicken and turkey, I've substituted meats before in various recipes and they still come out really good. I have never enjoyed cooking because of the time factor and some recipes are so hard to follow but NOT IN THIS BOOK! The recipes are pretty quick and easy and even newbie cooks will love this book! To give you an example, I have a toddler and I am actually able to cook a meal from this book in under about 30 minutes (which is about the time it takes before she starts getting bored and wanting my attention!)
I have seriously not had one bad meal from this cookbook. I also love that it lists the nutrition information, because I count calories for weight loss and maintenance and with them listed I don't have to guess or calculate on my own. A major plus!!
I highly recommend this cookbook! I hope they make it available on Kindle soon because our book is starting to fall apart!

I love this cookbook! The recipes are sensible with simple ingredients 90 percent of the time. The lowfat variations work well. I can tell the recipes have been worked through. The book is organized beautifully. I've enjoyed reading it and plotting my next lowfat delicious culinary adventure. Also, the author gives all manner of helpful information regarding the food. ie when cooking quinoa, to rinse thoroughly first to get rid of the soapy residue from the grain. I envy this woman's family and their great meals.

My "Go To" cookbook

This is easily the best cookbook of the many I own. Every recipe that I have tried has been excellent. Moreover, the recipes meet my ingredients/time standards: not more than 5-10 ingredients that i would normally already have or buy plus not more than 30 minutes of hands-on time. I originally had the paperback edition which I wore out and subsequently purchased the hardcover. I expect i will use it for many many more years.
